Champagne Pas Dosé 'Sauvage' Famille Delouvin

The Pas Dosé Champagne ‘Sauvage’ from the sparkling wine producer Famille Delouvin represents a refined expression of Pinot Meunier that impresses with its direct yet deep personality. Historically used in blends with the more noble Pinot Noir and Chardonnay, Pinot Meunier can instead give rise to Champagne of great class, as demonstrated by the ‘Sauvage’. Moreover, the choice not to dosage this sparkling wine, produced in very limited quantities, allows for an expression that is even more pure and authentic.

The ‘Sauvage’ Pas Dosé Champagne Famille Delouvin is a 100% Pinot Meunier whose grapes come from three different parcels located in the village of Vandières, in the Vallée de la Marne, characterized by three different types of soils, predominantly clay, sand, and chalk. To avoid altering the character of the terroir and preserve the freshness of the wine, the must obtained from the soft pressing of the grapes is vinified in stainless steel tanks, without undergoing malolactic fermentation.

After 6 months of resting in steel, the vintage wine is combined with reserve wines from two other vintages and is then bottled with the addition of liqueur de tirage for refermentation according to the Champenoise Method, with at least 36 months of aging on the lees. Following this are the degorgement and topping up with the same wine, thus without dosage.

The Pas Dosé Champagne ‘Sauvage’ Famille Delouvin has a straw yellow color with golden reflections and elegant effervescence. The aromatic profile consists of hints of tropical fruit and citrus, combined with peculiar notes of toasted dried fruit and brioche bread. Rich and complex yet fresh and fragrant, the taste has a long persistence on the palate with the exquisite sensations perceived on the nose.
