The Bardolino Chiaretto by Cavalchina is an elegant and fine rosé, fresh and savory, which well interprets the style of rosés from Lake Garda. It is made with indigenous red grape varieties historically present on the Veronese shore: Corvina, Molinara, and Rondinella. The vineyards are located in the beautiful area of Bardolino, on the gentle slopes of glacial morainic hills, with soils rich in pebbles and gravel. The sunny, mild, and almost Mediterranean climate, thanks to the influence of the large basin of Garda, has always been very suitable for vines. In this area, rosés have a centuries-old tradition and represent a true excellence at the national level.
The Rosé Bardolino Chiaretto is produced by one of the most important and renowned wineries in the Garda area. Cavalchina is a historic name in the territory and today manages an estate of about 50 hectares, divided into various denominations, ranging from Custoza to Bardolino, from Lugana to Valpolicella. In the best tradition of great rosés, the Chiaretto is a wine that is born in the vineyard. The grapes of Corvina, Molinara, and Rondinella, are harvested a couple of weeks in advance, in order to preserve freshness and avoid a too high sugar level. The bunches undergo a short pre-fermentation maceration at a temperature of 8-10 °C, before being gently pressed with skin contact in the press. The free-run must is vinified in white, in stainless steel tanks at controlled temperature. Before bottling, the wine rests for a few months in steel tanks.
The Bardolino Chiaretto Cavalchina wine is one of the most interesting interpretations of this excellence from the Lake Garda area. It is a rosé all played on finesse and freshness, which pairs very well with seafood appetizers, tomato-based first courses, and seafood stews. To be tried with a margherita pizza. To the eye, it presents a delicate light pink color, reminiscent of the Provençal notes of rose petals. On the nose, it is subtle and refined, with elegant floral aromas, fragrant citrus hints, aromas of grapefruit, pomegranate, raspberry, red currant, wild strawberries, sour cherries, and nuances of aromatic herbs. The palate is clear and smooth, savory and harmonious, with delicate fruit and a finish of great freshness.
