Notte Rosa, in addition to focusing on enhancing the grapes historically grown in Puglia, has found in Vermentino a grape variety that allows for the production of a white wine with great character, to be paired with the more traditional Verdeca and Fiano. The Vermentino vineyards are cultivated at about 100meters above sea level, on medium-textured soils with the presence of sand and skeleton. The sunny climate is always mitigated by sea breezes, which create a perfect habitat for grape maturation. At the end of the harvest, the bunches are subjected for a few hours to a cold pre-fermentation maceration, in order to extract all the aromas. After soft pressing, the free-run must is fermented in stainless steel tanks at controlled temperature for about two weeks.
