The Pian Castello vineyard is located on a terraced plateau halfway up the slope, well exposed and completely surrounded by woods. Here, Chardonnay and Pinot Nero have been cultivated for over thirty years with clones from Champagne, producing low yields of 50 quintals per hectare. After manual harvesting, the grapes are pressed very gently as whole clusters and the free-run must is sent for fermentation, part in stainless steel and part in barrique. After a few months of aging, the base wines are blended to create the cuvée.
