After the manual cleaning of the agave, the sugary core of the plant, locally called “\u003cem\u003epi\u003c\/em\u003e\u003cem\u003eñ\u003c\/em\u003e\u003cem\u003ea\u003c\/em\u003e” due to its appearance resembling that of pineapple, is cooked in traditional stone ovens.
