A label that pairs well with great red meats and game dishes.\u003c\/p\u003e\n\u003cp\u003eThis red “Soffocone di Vincigliata” is born from a blend crafted by the Bibi Graetz winery where, alongside 90% Sangiovese, we also find small percentages of Canaiolo and Colorino, indigenous grape varieties of Tuscany. The vines of these three varieties are about 40 years old and grow using the guyot training system, rooting in soils rich mainly in clay and galestro. The fermentation of the must takes place in steel tanks for about ten days, during which various manual punch-downs occur. The final aging lasts for \u003cstrong\u003e15 months and \u003c\/strong\u003etakes place in French oak barriques. At the end of maturation, bottling and marketing operations are carried out.\u003c\/p\u003e\n\u003cp\u003eThe “Soffocone di Vincigliata” Bibi Graetz develops in the glass with a ruby red color, characterized by a brilliant light.
