The vineyards are trained in Guyot and are managed to produce with low yields, less than 60 quintals per hectare. The cool climate and significant temperature variations between day and night allow for grapes with an elegant profile and particularly intense aromas. After a cold maceration for 12-24 hours, the traditional white winemaking process is followed by aging the wine for about 7 months in large oak barrels, before proceeding to bottling.\u003c\/p\u003e\n\u003cp\u003eThe Sauvignon “Puntay” Erste+Neue represents \u003cstrong\u003ea mature and intense interpretation\u003c\/strong\u003e of Sauvignon Blanc, which primarily aims to highlight the great aromatic richness of this famous French grape variety.
