We are at an altitude above sea level between 330 and 440 meters, facing southeast, within a terroir characterized by dolomitic rock, limestone, and gravel. The grapes are gently pressed and the must undergoes static decantation. The subsequent alcoholic fermentation takes place both in containersof stainless steel at controlled temperature and in barriques – for 15% of the total mass –. The aging continues on this choice – \u003cstrong\u003estainless steel and barriques\u003c\/strong\u003e, always with the same proportions – and takes place on the yeasts for 5 months. \u003c\/p\u003e\n\u003cp\u003eThe Sauvignon “Castel Ringberg” produced by the Elena Walch winery presents itself visually with a brilliant color focused on the shade of straw yellow, enriched by slight greener notes at the rim.
