Nature and its preservation are Count Michael's aspiration, which is why he has long decided to convert his production to organic and to work according to the \u003cstrong\u003eprinciples of biodynamics\u003c\/strong\u003e. The goal is to create a harmonious unicum between man, environment, and wine.\u003c\/p\u003e\n\u003cp\u003e“Eichhorn” is made from Pinot Bianco grapes from the vineyard that bears the same name as the wine. It is located at the Leiben Aich estate in Terlano, characterized by sandy porphyry soil of volcanic origin and a warm microclimate. Once harvested and destemmed, the grapes are left to macerate in the press in the presence of the skins, thus enriching itself with aromatic complexity and structure. Part of the subsequent alcoholic fermentation takes place in wooden barrels; the entire process is carried out by the action of \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e that characterize the wine in an extremely territorial way. The same yeasts will accompany the aging of the wine \u003cstrong\u003ein oak barrels for four months\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp\u003eThe color of this Alto Adige Pinot Bianco is bright yellow.
