After harvesting, the bunches undergo the destemming-crushing operation, followed by the alcoholic fermentation of the must in temperature-controlled stainless steel tanks, with about 12 days of maceration on the skins. Also in steel, the \u003cstrong\u003ecomplete malolactic fermentation\u003c\/strong\u003e takes place, followed by a maturation period of several months before the finalbottling. \u003c\/p\u003e\n\u003cp\u003eTo the eye, the Langhe Nebbiolo Cascina Bruciata 'Usignolo' expresses a light ruby red color with slight garnet reflections.
