The grapes come from only 3 \u003cstrong\u003ehistoric vineyards over 30 years old\u003c\/strong\u003e located in Erbusco, which over the years have proven to produce clusters of extraordinary aromatic qualities. After manual harvesting, the grapes undergo soft pressing and a very brief maceration in contact with the skins, at a temperature of 14 °C, to extract a minimum of color and the precious aromatic substances. All stages of winemaking take place in \u003cstrong\u003esmall oak barrels\u003c\/strong\u003e. The fermentation process, malolactic fermentation, and aging in barrel of the base wines lasts a total of 8 months. Only the Pinot Nero from the best barrels will be included in the final blend. Once bottled for the second fermentation, the wine rests on the lees in the Ca’ del Bosco cellars for a minimum of 8 years.
