The area's climate is cool and breezy, and the vines are planted on lava matrix soils with alluvial components and the presence of clay. At the end of manual harvesting, which usually takes place towards the end of September, the best grapes undergo cold maceration for about 24 hours before fermentation in steel tanks at a controlled temperature of 16 °C for about three weeks.
