The selected berries then proceed to the pressing phase, and the must obtained from this operation ferments in steel tanks. Aging takes place for a period of 4 months, and \u003cstrong\u003e30% of the total mass matures in large barrels\u003c\/strong\u003e.\u003c\/p\u003e\r\n\u003cp\u003eThe Chianti \"Biskero\" develops in the glass with a typically bright ruby color.
