It is important to note that the Chartogne Taillet winery enjoys the Recoltant Manipulant (RM) label, which emphasises that the grapes come exclusively from its own vineyards and that the Champagne is only produced within the estate's cellar.\u003c\/p\u003e\u003cp\u003eCuvée \"Sainte Anne\" Champagne Extra Brut Chartogne Taillet is made from grapes from vineyards at least 25 years old, worked respecting nature and its rhythms. After harvesting by hand, the work in the cellar is followed by vinification using only \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e in stainless steel vats. This is followed by a second re-fermentation in the bottle with the addition of reserve wines between 2 and 5 years old, approximately 50% of the mass.
