At the time of harvest, the bunches are manually harvested following a very strict selection that lowers the yields per hectare, prioritizing quality over quantity. The alcoholic fermentation of the must takes place in cement tanks, as does the aging for 6 months.\u003c\/p\u003e\n\u003cp\u003eThe Catarratto from Porta del Vento is a wine that immediately impresses with its \u003cstrong\u003eintense and engaging aroma\u003c\/strong\u003e, as only the warmth of the south can be.
