Given the imposing influence of the volcano, there are strong temperature swings between night and day that allow a \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003edeep and broad development of the aromas of the bush-trained grapes\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e. Once the grapes have been harvested exclusively by hand, spontaneous fermentation takes place in steel vats using only indigenous yeasts.
