The grapes are hand-picked with particular attention to avoid damage and are then placed whole in \u003cstrong\u003ecarbonic maceration for a few days\u003c\/strong\u003e, with the alcoholic fermentation initiated exclusively by the yeasts present on the berries and in the winery environment. With the must still in full fermentation, a light pressing is then carried out, followed by 20 days of skin maceration. The aging of a few months takes place for 25% of the mass in used barriques and for the remaining 75% in steel tanks, at the end of which the wine is bottled without undergoing any filtration.\u003c\/p\u003e\n\u003cp\u003eThe Romagna Cabernet Sauvignon ‘Cabernetico’ by Tenuta Saiano has a bright garnet red color. Fresh, lively, and smooth on the palate, with a notable mineral imprint and gentle tannins.
